SAUERKRAUT STEW

Sauerkraut can you help you to improve your gut health.


INGREDIENTS (PORTION FOR 4)

  • 1 leek

  • 400g sauerkraut (ready to eat)

  • can of tomatoes

  • 800ml broth

  • 200g salsiccia OR smoked tofu

  • bell pepper powder

  • fresh parsley


PREPARATION

  • Cut leek in small stripes and wash

  • put the sauerkraut in a sieve and let it drain over the sink

  • Heat some oil in a pan and add the leek

  • Fry briefly before adding the sauerkraut and bell pepper powder

  • Add the tomatoes and broth

  • Let it cook for around 15 minutes at low heat. Add some salt & pepper.

  • Cut the salsiccia/smoked tofu in stripes and add to the stew

  • Before serving it add some fresh parsley on top.

NOTES

You can enjoy the stew as it is or add a source of carbohydrates to it - potatoes or some whole grain noodles will work pretty well.
