It doesn't get much easier than this feta omelette recipe.
INGREDIENTS (PORTION FOR 2)
Half an onion
small chili (optional)
250g baby leave spinach
4 eggs
100g feta cheese
130g rice
PREPARATION
Peel onion and cut into strips
Chop chili
Wash spinach and drain well
Prepare the rice in rice cooker or a pot with salt
Mix eggs with salt and pepper. Stir in a sip of milk briefly at the end
Heat oil and fry onion & chili for 2 minutes
Add spinach and fry for another minute
Add the egg mixture and bake for 2-3 minutes at medium heat
Place feta on one half of the omelette and fold
Serve the omelette on a plate with rice and lemon.
Optional: Add cilantro on top
