It doesn't get much easier than this feta omelette recipe.


  • Half an onion

  • small chili (optional)

  • 250g baby leave spinach

  • 4 eggs

  • 100g feta cheese

  • 130g rice


  • Peel onion and cut into strips

  • Chop chili

  • Wash spinach and drain well

  • Prepare the rice in rice cooker or a pot with salt

  • Mix eggs with salt and pepper. Stir in a sip of milk briefly at the end

  • Heat oil and fry onion & chili for 2 minutes

  • Add spinach and fry for another minute

  • Add the egg mixture and bake for 2-3 minutes at medium heat

  • Place feta on one half of the omelette and fold

  • Serve the omelette on a plate with rice and lemon.

  • Optional: Add cilantro on top
