ONE PAN POTATO & EGG

Only one pan is needed - so the perfect dish if you are lazy for washing your dishes in the morning.


INGREDIENTS (PORTION FOR 2)

  • 15g olive oil

  • 750g potatoes

  • 1 red onion

  • 4 eggs

  • 150g spinach

  • 30g cheddar

  • fresh parsley


PREPARATION

  1. First step is to peel the potatoes and cutting them into small cubes.

  2. Pre heat olive oil in a pan, add in the potatoes and cook for 10 minutes. Stir occasionally.

  3. Cut one big red onion into small pieces and add to the potatoes. Fry for another 5 minutes.

  4. Wash Spinach and add them as well. Stir well and let everything cook for another 5 minutes.

  5. Make some space for the eggs, add them in and top the potatoes with cheddar (or any other cheese). Cover with a lit and wait for around 5 minutes at medium heat until the eggs are set.

  6. Serve with fresh parsley on top.
