LENTIL SALAD



INGREDIENTS (PORTION FOR 2)

  • 100g brown lentils

  • 2 handful tomatoes

  • 1 cucumber

  • parsley

  • Dressing: 2-3 tbsp olive oil, salt, pepper, limejuice

  • Opt.: rice or potatoes as an additional source of carbohydrates


PREPARATION

  • Boil the lentils according to the package instructions and let them cool down

  • Chop cucumber, tomatoes and parsley into small pieces

  • Likewise the parsley

  • Then mix everything together and add the dressing
