LENTIL BOLOGNESE

One of my favorites - so simple & delicious.


INGREDIENTS (PORTION FOR 2)

  • 100g red lentils

  • 2 carrots

  • 3-4 celery

  • 1 garlic & 1 onion

  • 400g tomato puree

  • 400 ml vegetable broth

  • 200g whole grain noodles

  • parmesan & ruccola


PREPARATION

  • roast the cutted onions and garlic in a pan with oil

  • add chopped carrots and celery, as well as some salt and pepper

  • add the tomato puree and cook for a few minutes

  • add washed lentils and broth

  • cook for 15 minutes

  • cook the noodles as usual

NOTES

Rinse the lentils with plenty of water before cooking to get rid of any impurities.

The bolognese can be kept in the fridge for several days.
